Gratitude

Recently, I took on the task of separately moving both my mother and my father out of their homes, within a three week period.

In both moves, I discovered recipe files with ‘old fashioned’ recipe cards. I never used these words before; but now with raising teens, and so many amongst me, the “olden days”, and “old fashion” have become more common phrases in my daily life.

Back to the recipes. While I readily threw out old photos that mattered not, I acted like a hoarder when it came to the recipes. When I found these treasures, I felt as if I had struck gold. Many of my fondest memories I had as a child were around food. I can still capture and feel the comfort of many of these foods.

Our holidays growing up were with the same family for the first decade of my life. After my parents divorced, I still celebrated relationships through food.  I continue to do so years later.

My husband is a fantastic cook and shows me ALL of his love through the magical dishes in his kitchen. I am not allowed in the kitchen because, like Gordon Ramsey, he takes his craft seriously and I genuinely feel loved through his cooking.

I also know my mother’s love filters through her chicken stock. We call it liquid gold. It’s a treasure to come by her concoction.

In her latest move, I found one of my most favorite recipes of all and I included it for your pleasure.

It’s zucchini bread. I brought it home, and my vegan-eating daughter quickly and easily turned my favorite treat into one that is reasonably healthy. I have included her changes.

Although I never know how gratitude will show up, it is a priority of my routine because it’s good for the soul.

My Favorite Zucchini Bread

WET INGREDIENTS
3 eggs
1 c oil
2 c sugar
2 1/2 c shredded zucchini
3 tsp vanilla
DRY INGREDIENTS
3 c flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 tsp cinnamon
Walnuts if you want

Mix together oil and sugar, then add applesauce along with vanilla.
Mix well.  Slowly add zucchini, mixing well.

Sift together all dry ingredients. then add dry ingredients a
third at a time into the wet ingredients.

Preheat oven to 350

Distribute batter into cupcake tins

Bake for 23-27 mins

 

My Daughter’s Vegan Twist on My Favorite Zucchini Bread

WET INGREDIENTS
3/4 c applesauce
1 c oil
2 c sugar
2 1/2 c shredded zucchini
3 tsp vanilla
 DRY INGREDIENTS
3 c flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 tsp cinnamon
Walnuts if you want

Mix together oil and sugar, then add applesauce along with vanilla.
Mix well.  Slowly add zucchini, mixing well.
